Watermelon salad
Megan with one of her favorite dish
What you need
1/2 Watermelon cut into triangle
3 Pickled shallot
16 oz Feta
4 Tbsp of roasted Pistachios
Few springs of fresh Mint
4 oz of Peppadew peppers
Zest of 1 small lime and juice
Pinch of Sea Salt
Pinch of Freshly ground Pepper
4 oz of pitted Kalamata Olives
Pinch of Aleppo Pepper
How to do it
Lay the pickled shallots as a bed in a large plate or platter then arrange the watermelon slice on top with kalamata olives, crumble feta, peppadew peppers.
Drizzle Extra virgin olive oil and lime juice over the salad then sprinkle over Pistachios, add fresh mint then season with some Aleppo peppers and serve!
