ALMOND COOKIES
Ghriba. Moroccan Almond Cookie
WHAT YOU NEED
Yield: 15 Cookie
2 Cups of Almond Flour Blanched
1/2 Cup of Granulated Sugar
4 Tbsp of Unsalted Butter
1/2 Tsp of Baking Powder
Few Pebbles of Arabic Gum
Zest of 1 Lemon
4 Egg yolks
Pinch of Salt
4 Tbsp of Orange Blossom Water
1/2 Cup Powdered Sugar for Dipping
WOW TO MAKE IT
Start by preheating the oven to 350°F and line a baking sheet with parchment paper.
Grab the pebble of Arabic gum and crush it and mix it with a bit of sugar.
Have a ramekin of small bowl with orange blossom water.
In large bowl using your hand mix together sugar, butter, egg yolks, lemon zest and crushed Arabic gum. Stir gently into a paste.
Scoop the cookie dough using an ice cream scoop and roll into 12 evenly sized balls and rolled them quickly dip in orange blossom then followed by the powdered sugar, coat evenly.
Then flatten in the middle gently and add whole almond in the center of each cookie.
Bake until golden in oven at 350 degrees for 20 minutes.
Transfer the almond cookies into a wire rack to cool completely.
Serve and enjoy with your favorite Moroccan mint tea!
