HONEY ROASTED CARROTS with POMEGRANATES and PISTACHIOS

What you need:

2 lbs Carrots

2 Garlic Cloves, whole

2 Tablespoon of Honey

2 Tablespoon 

4-5 Stems of Thyme

1/2 Cup of Cilantro

3 Tablespoon Shelled Pistachio roughly chopped

1/2 Cup Pomegranate seeds

4 Tablespoon Extra virgin olive oil

1  Teaspoon Sea salt

¼ Teaspoon freshly ground black pepper

Pomegranates are native to the Middle East and the word Pomegranate means apple with many seeds


How to make it:

Turn oven temp up to 400°.  Wash and Peel whole carrots and pat dry. 

(Leave a half inch or so of the greens attached-visually appealing). 

In a bowl toss carrots, garlic cloves with Healthy Fat from extra virgin olive oil. Pour into baking sheet with parchment paper and season with Sea salt and freshly ground pepper. 

Spread carrots out and arrange in a single layer and  top it with thymes.

Roast for 20 min then remove sheet pan from oven and drizzled some honey and toss to coat evenly and roast for another 10 min, or more until tender and caramelized.

Remove from oven and discard the garlic and thyme. Transfer to a plate.

Sprinkle with crushed pistachio, pomegranate and chiffonade cilantro. 

 

Honey glazed carrots with Pomegranates and pistachios so delicious, you will get hooked!

  • Serve warm or room temperature
