THE NINE TYPES OF SUSHI

If you dream of Sushi, you’re in the right place.

My first job as a Sashimi Chef was at Okura in Laguna Beach, Ca. It was an amazing experience. I love to create new dishes and accents based on traditional Japanese cuisine. In traditional Japanese, sushi rice is considered the main ingredient with the fish complementing the perfection of the grain.

The rice needs to be on the softer side and cool temperature-wise. It has a good sourness to it and a lot of presence.
The fish and the rice – if its not fresh, there’s nowhere to hide.

Nigiri [Hand press rice]
Norimaki [Rolled nori seaweed]
GunKan Maki [Battleship sushi]
Temaki [Nori wrapped into a conical shape]
Narezushi [Fermented Fish]
Inari-zushi [Pouch-like deep fried Tofu]
Hakozushi [Rectangular boxed sushi]
Sasazushi [Bamboo leaf]
Kakinoha-Zushi [Leaf wrapped sushi]……….Just to name a few. Maki rolls are probably one of the most popular types of sushi. And the most Americanized popular roll out of them all, at least in the U.S., is the California and the Philly roll.
