BEET SALAD
If you have never prepared beets before it is far simpler than you may think.
What you need
Salad :
2 Large Beets Scrubbed Clean
1 Large Tomato Cubed
Feta Cheese
Vinaigrette :
1 Tsp Dijon Mustard
3 Tbsp Olive Oil
3 Tbsp Lemon Juice
2 Tbsp Fresh Chopped Cilantro
Dash of Salt and Pepper to taste
How to make it
First wash beets and cut off stems. Drizzle with with olive oil and salt and pepper.
Wrap the unpeeled beets in aluminum foil and bake them at 350°F for 60 minutes or until done. Let cool then remove their peels and dice or quarter them.
To prepare the vinaigrette. Whisk together all of the ingredients until emulsified.
To assemble the salad. Compose individual salad plates with beets, tomatoes, and top it with feta cheese. Finally drizzle vinaigrette on each plate over the beets salad.
Serve immediately.
